Introduction

Wolves are intended for grinding both frozen and unfrozen meat, endocrine-enzyme, gelatin and fat-containing raw materials, bread, potatoes, etc. In most of these machines, mechanized supply of raw materials to their working part is provided.

Wolves used in the meat industry, in relation to technological requirements, are characterized by the following features: they are suitable for cutting with varying degrees of grinding of any product with any connective tissue content; Cutting, if not required by specific process conditions, such as in the grinding of glue-gelatin raw materials, is not accompanied by large compressive forces that can compress the liquid fraction; the cutting mechanism is assembled such that grinding proceeds sequentially, without unnecessary energy consumption and without reducing machine productivity; the working part can be easily disassembled for sanitary treatment and easily assembled to prepare the machine for subsequent work; transfer mechanisms of wolves are equipped with safety devices in case of overload; an arrow showing the direction of rotation of the working parts is applied to the cylinder of the rod, etc.

The main characteristic of the wolf is the diameter of the lattice: for industrial types, it is 80300mm; the number of worm revolutions per minute 100200 for slow-moving, 200300 for medium and more 300 for high-speed machines. Raw materials are supplied to wolves along the descent, manually or using mechanical loaders. For the food industry, wolves are produced without devices for forced supply of raw materials to the worm from the loading bin and with devices for forced supply.

In industry, wolves of various brands and modifications are used, namely: FVS, MP1160, SHX-1 (Hungary), No. 112 (Slovakia), Seidelman B120 (Germany), KremerGrebe W220 (Germany), Laska (Austria), K6FVP160 (Belarus).

In this course project, the design of the Seydelmann AU200 wolf is being developed.

Erection, Operating Regulations and Occupational Safety

On horizontal value of wolves it is checked by bearing plate in two mutually perpendicular directions, verticality - by treated surfaces with level and plumb. The level is placed on the upper edge of the loading bowl. When adjusting the installation of the taps, the deviations of the axes and elevations horizontally and vertically should not exceed: the main axes of the machine in plan - 10 mm; from the horizontal - 0.3 mm by 1 m of length.

Before testing, the rear panel is opened to idle position, the drain plug is screwed and the remaining oil is poured from the reduction gear box. Wedge belts are removed to check rotation direction of mechanisms. The motor pulley must rotate counterclockwise when viewed from the pulley side when the shield is removed from the bed. Before the test, wedge belts are put on idle and their tension is adjusted .

Operating Rules:

1.1.It is necessary to systematically carry out preventive inspections of the serviceability of the machine and its electrical equipment and installed scheduled preventive repairs and tests of electrical equipment in accordance with the requirements of PTE and PTB of electrical installations.

1.2.Making of friction parts of the machine must be performed regularly, refer to lubrication diagram. It is necessary to force 200 oil into bearing units every two weeks, put any capacity under the drain pipe. Discharge shall be performed after machine stop at heated bearing units.

1.3.It is necessary to sharpen double-sided cross-shaped knives and knife grids in a timely and correct manner. Operation on a poorly sharpened cutting mechanism leads to a decrease in the quality of the crushed product and wear of the machine mechanisms.

1.4.After each working shift perform sanitary treatment of the machine.

Note: In case of long-term machine shutdown, preservation should be performed with technical anti-corrosion grease, not with food fat.

Conclusion

A batchwise automatic BA2 for sausage products was considered, which is one of the most common machines in medium-capacity food factories.

The paper described the principle of operation of the machine, design, technical characteristics, as well as the classification of such equipment, and also made some calculations.

The advantages of this machine include: practicality, simplicity and ease of control, relatively small size.

Currently, the wolf is still in service with factories and workshops. But gradually he moves to replacing this machine with more advanced, capable of implementing various technologies.
