5.6.2 Process solutions.
5.6.2.1 Goods reception and sorting area.
Goods are delivered to the store by road, unloaded by forklifts on an electric drive. Unloading is carried out in the goods acceptance room. Vehicles become to one of the four debarkers, after which unloading begins. The project provides for a room of operators, it houses personnel performing the acceptance of goods, all workplaces of employees are equipped with personal computers. After unloading and sorting, the goods are placed in the storage room of goods, from where it enters the trading room of the first floor, using electric loaders.
After unloading and sorting, food products are moved to the second floor using cargo and passenger elevators. The accumulation and storage of products is carried out in one freezer and three refrigerators, with a total area of 168 m2. Products are transported by means of trolleys to shelves.
5.6.2.2 Production area (food shops).
For the preparation of salads, sorting and packing of vegetables, cutting fresh meat and fish, making culinary products, the project provides for appropriate workshops: a salad shop, a vegetable workshop, a meat and meat workshop, a cooking workshop. To ensure the planned productivity of the workshops, the project provides refrigeration chambers in which the necessary stock of products is stored. To wash the utensils of the workshops, a room of washing kitchen utensils is provided, for washing the utensils of the trading room, a separate washing room is provided. Dirty dishes through a dirty zone get into washes, clean dishes get into
workshop on the side of the clean area. The adopted planning decisions do not allow crossing of flows of raw and finished products .
According to the customer's task, the project provides a bakery designed for baking bread and small pieces. To comply with anti-epidemiological measures, the project provides for egg processing rooms and oviparous. For sifting flour there is a separate room equipped with a sifting machine. To reduce concentration of flour suspensions in air, an exhaust umbrella is provided above the screening machine. Dough preparation takes place in the dough kneading shop, after which it enters the dough preparation shop, where products are molded. The baking shop is equipped with SOTTORIVA spacer cabinets supplied by RP Technologiya. After baking, the product is sent to a room with a cooling chamber equipped with a refrigerating chamber. After the products have cooled, in the packing room, the products are packed after which they fall on the shelves of the trading room.
5.6.2.3 Trading room of industrial goods.
The merchandise trading room is located on the ground floor of the store. The trading hall is equipped with shelves designed for laying out and storing goods. The design provides for racks of four tiers designed for loading with pallets. To manipulate pallets, the trading room is equipped with forklifts on an electric drive. A separate room is provided for charging batteries of loading equipment. Loading equipment is equipped with closed-type batteries, which avoids harmful evaporation during charging and operation of batteries.
5.6.2.4 Trading room of food products.
The food trading hall is located on the second floor of the store. Installation of products that require compliance with the temperature regime during storage is carried out in refrigerating slides and bonets with a remote refrigerating unit. The distribution of goods is provided in accordance with sanitary standards and rules for food stores, and does not allow the joint placement of various groups of products .
5.6.2.5 Group of administrative premises.
To accommodate administrative personnel, the project provides office space. The project provides for men's and women's wardrobes, with bathrooms and showers. Wardrobes intervene 229 individual lockers. For meals, there is a staff room equipped with refrigerators, microwaves, dining tables with chairs.
5.6.3 Occupational safety measures.
In accordance with the requirements of the system of occupational safety standards and sanitary standards, the project provides for technical, sanitary and hygienic and organizational measures to limit the impact on workers of harmful and dangerous industrial factors.
The mechanical supply ventilation and heat supply systems provided by the design provide the normative meteorological conditions in the air of the working zone, provided for in GOST 12.1.00588 "General sanitary and hygienic requirements for the air of the working zone."
The design of natural and artificial lighting meets the requirements of SanPiN 2.2.1/2.1.1.127803 "Hygienic requirements for natural, artificial and combined lighting of residential and public buildings."
The process equipment provided by the project has certificates of compliance with the requirements of GOST 12.2.003 - 74 "Production equipment. General safety requirements "and GOST 12.2.049 - 80" Production equipment. General ergonomic requirements. " The equipment provided by the design is not a source of danger when fulfilling the regulated rules for the safe operation of the equipment.
5.6.4 Fire fighting measures
The project provides for measures to ensure fire safety during the operation of the building:
- installation of power and lighting electrical equipment in production and auxiliary areas is made in accordance with the requirements of PUE according to the accepted classes of site premises;
- all areas are provided with primary fire extinguishing facilities.
Fire safety is ensured due to the measures envisaged by the project and compliance with the requirements of NPP - 01 - 03 "Fire Safety Rules in the Russian Federation."
