Description

The most extensive group of machines for medium grinding of meat raw materials are spinning tops. With the help of these machines, the primary grinding of the product is usually carried out before its salting and fine grinding.

In the housing there is a working chamber for processing the product, which is a cylinder, inside of which there are ribs that prevent the product from cranking relative to the screw.

To move the meat in the working chamber, feed it to the knives and push it through the knife grates, a rotating auger is used with the pitch of the turns decreasing towards the unloading of the product. The pressure generated by the screw must be sufficient to push the meat through the cutting mechanism without releasing a liquid phase from it.

The cutting mechanism of the spinning top consists of a fixed undercutting grate, rotating cross-shaped knives, fixed knife lattices with holes of different diameters and a clamping nut. The main technological parameter of the spinning top is the size (diameter) of its lattice. It is 200 mm.
