After turning on the machine, pieces of meat cut into portions are lowered into the loading funnel and captured by rollers with milling cutters rotating towards each other. Passing between the cutters, a piece of meat is cut on both sides by their teeth, while the fibers are destroyed and the surface increases. MS 19-1400 mechanism is actuated by universal PM-1.1 or PU-0.6 drive. Introduction

At catering enterprises for the treatment of fish and meat, machines are used: meat grinders, stuffing machines, meat producers, fish cleaners, cutlets and universal drives for meat workshops with a set of replacement actuators for them. Currently, meat grinders are used: MIM60 with manual drive, MIM82, MIM-105 with an individual electric motor, MSG150, MSG70 - replaceable meat grinders to universal drives PU0.6, PG-0.6. All meat grinders are indicated by the letters MIM, which means "meat grinder machine," and numbers corresponding to the diameter of the knife grid (in mm).

Mince grinders are designed for mixing mince and its components into a homogeneous mass and enriching it with air oxygen, which ensures production of high-quality mince. At public catering enterprises, individual-powered stuffing machines and the MS 8150 stuffing machine are used as a replaceable mechanism for a universal drive.

Meat loosening machines are used to cut the surface of portion pieces of meat in order to break the fibers of the connective tissue in them. Such pieces of meat are less deformed during heat treatment, fry faster and are more juicy and soft. Looseners are used in catering establishments

MPM15 meat with individual drive and MS19, as a replaceable mechanism to the universal drive PU0.6. Currently, a machine of the MFK2240 brand is used to form cutlets, which not only forms cutlets, but also performs planning on one side.

To remove scales from fish at catering facilities

machines are used - fish cleaning RO-1 with individual IMS1740 drive, as a replaceable mechanism to the universal PM1.1 drive.

To prepare meat and fish cutlets, universal drives of specialized purpose with a set of replaceable mechanisms of the first and second versions are used in meat workshops.

The meat-making machine saves the time of kitchen workers, which allows you to increase the efficiency of their work, and also has a simple and reliable design that eliminates the possibility of injuries when using it.

5. Technical requirements

5.1 Requirements of purpose: High-quality and productive mechanical loosening of meat

5.2 Product composition: Stainless steel housing, working chamber with knives, loading and unloading doors, rotating star knife, drive mechanism (V-belt transmission and electric motor 4A90LB8) and control panel.

5.3 Design requirements: Correct setting of blade rotation speed by the manufacturer is required. At low speed, the loosening conditions deteriorate. With an excessively high speed of rotation of the knives, the product stresses the walls (due to large centrifugal forces). The housing and workpiece shall be stainless steel as the machine is in constant contact with water. Provision of free access to the electric motor in case of its failure.

5.4 Requirements of economical use of raw materials, materials, fuel and energy: The Myasorykhlitelny car is calculated on the supply voltage of 220 V, with a performance of 1800 pieces/h, with a demanded power of 0.2 kW.

5.5 Requirements of resistance to external effects: Protection against direct sunlight, corrosion protection. Protection of the engine from water splashes, content of non-conductive dust in the air up to 100 mg/m3.

5.6 Processability requirements: Application of methods of complete interchangeability and adjustment of achievement of accuracy of closing links; availability of structural shapes for parts providing free access to machined surfaces; availability of materials with good corrosion resistance; availability of unified parts and assembly units in the article.

5.7 Requirements for Safety and Environmental Protection: It is not allowed to switch on the meat smelter without reliable grounding. Every day before turning on the machine, it is necessary to check the reliability of the grounding wire connection. Grounding point (bolt with washer). It is not allowed to use a meat emitter without a circuit breaker.

5.8 Conditions of operation (use): When working with a meat smelter, it is necessary to ensure that the flow of water with mezga occurs constantly, without overflowing the drain tray. After completion of operation or during technological interruption in operation, shut down the machine by pressing the red "Stop" button of the push-button switch. Every day after completion of operation, it is necessary to perform thorough cleaning of the machine in the following order: - remove the plug from the socket; - turn off the circuit breaker; - open the water supply valve and wash the dirt and mess from the internal cavities of the machine housing with a stream of water; - wipe the external and internal surfaces of the machine housing with wet, and then dry rags. It is allowed to use hair brushes and rags.
