2 Process Line Description

Mechanized and automated line with clot flow processing

designed to produce bold curd, low-fat and "Peasant."

Clot production is based on acid coagulation of milk proteins by fermentation

The process of curd production on the line begins with filling the reservoirs with pasteurized, homogenized and cooled milk to the fermentation temperature. In them, fermentation and fermentation occur, as well as mixing milk with starter and clot in tanks. After mixing, the finished clot is fed from the tanks by a screw pump to the clot heat treatment apparatus, where it is heated, held and cooled. The curd clot, after heat treatment in the heat exchanger, enters a rotary dewatering device, where the whey is separated from the clot through a filter cloth (lavsan), collected into an intermediate tank, and by means of a self-suction pump is withdrawn for redundancy in the tank.

Further, cottage cheese coming out of dehydrator is fed through tray into bin of two-cylinder cooler. Here, the curd is captured by the conical part of the rotary drum and fed into the space between the cylinders and the extrusion drum. Cottage cheese moves along cylinder by screw of cylindrical part of drum, is pushed into hole in detachable cover of drum and is supplied for packing.

Curd cooled to a temperature of 812 ° C is packed on M6AP2T packing machines into briquettes of parchment of 0.25 kg. Packaged cottage cheese is directed to the storage chamber for post-cooling.

The control and control system used in the line allows you to monitor the progress of the technological process, the main parameters of milk, clot, finished product, hot and ice water, as well as steam and compressed air.
