Introduction

Heat exchangers (heat exchangers) are used for heat exchange between two heat exchangers for the purpose of heating or cooling one of them. Depending on this, heat exchangers are called heaters or refrigerators.

According to the heat transfer method, the following types of heat exchangers are distinguished:

- surface, in which both heat carriers are separated by a wall, wherein heat is transferred through the wall surface;

- regenerative, in which the process of heat transfer from hot to cold heat carrier is divided by time into two periods and occurs during alternate heating and cooling of the heat exchanger nozzle;

- mixing, in which heat exchange occurs at direct contact of heat carriers.

In the chemical and food industries, surface heat exchangers with a variety of structures have become most widespread. A special group is plate heat exchangers (FTs) for heat treatment of various liquid media, which are one of the progressive types of continuous liquid heat exchangers.

FTs can be used as refrigerators, heaters, capacitors and refluxers. The advantages of PT include:

- compactness;

- high performance;

- high heat transfer intensity;

- easy cleaning of working surfaces;

- possibility of re-arrangement of the apparatus for various operation schemes.

The disadvantage of PT is the large number and considerable extent of sealing gaskets.

The constructive, technological and operational advantages allowed the PT to take a dominant position in the treatment lines for milk, milk, milk, fruit juices, and mineral waters.

When pasteurizing milk and cream in one apparatus, it is possible to combine all stages of the process: heating the product due to heat recovery of the pasteurized product, directly pasteurizing with hot water and cooling the finished product in two stages: first with cold water and final-refrigerating brine.

With pasteurization of milk, the low initial temperature of the starting product allows excluding the water cooling section.

PT's are used as beer wort coolers. In this case, the apparatus consists of two sections: water and brine cooling.

At pasteurization of milk the final temperature of a product is equal 15 wasps therefore PT consists of three sections: regenerations, pasteurizations (in the separate tubular vyderzhivatel during 100 c) and cooling with water [1].
