Description
Drying is the heat treatment of materials in order to remove moisture from them by evaporation (2500 kJ is spent on evaporation of 1 kg of water). Evaporation of moisture from the material may occur provided that the environment is not saturated with moisture and is capable of receiving vapors from the surface of the material. Therefore, when drying, it is necessary that the concentration (partial pressure) of water vapor directly at the surface of the wet material () is greater than the concentration of water vapor in the ambient gas environment (). If >, then there will be humidification of the material, accompanied by condensation of moisture from the environment on its surface.
